Tonight I was lucky enough to be invited by Paige, the other girl from the U of A, to her belated Thanksgiving dinner! Unfortunately a real turkey was not able to be obtained but I think everyone did a superb job without one (my contribution was the wine!). Suzanne made a zucchini wrapped mushroom, olive cream sauce appetizer with fresh arugula and crostini.
Juli outdid herself on decorations – aside from the Thanksgiving Canada things wall, she got leaves from outside to decorate the table!
For the main course we set it up buffet style because there wasn’t enough room on the table to fit it all! Dezzi made the gravy and the chickens – one was lemon herb and the other was done a balsamic vinegar; Paige made the mash potatoes, salad, and stuffing (which was superb!); and Amaya made a mushroom bean casserole! Food coma round 2 has commenced!
After dinner we wrote down what we were thankful for this year and posted it on the wall. Super cheesy, but also extremely precious!
We finished the night off with a homemade apple strudel made by Ruth… which was to die for!
I’m so thankful to be surrounded by people who care enough to make us have a little bit of home while abroad. Plus I think we’ve now hooked 7 other girls to Thanksgiving dinners for the rest of their lives!
